CARLSBAD, CA — Lilo, a fine-dining restaurant that opened in April in Carlsbad Village, has been awarded a Michelin star, becoming the only San Diego County restaurant to receive the honor in 2025.
Led by chef Eric Bost and restaurateur John Resnick, Lilo offers a 12-plus–course tasting menu in an intimate 22-seat space. The restaurant blends coastal California ingredients with French and Japanese techniques, earning praise for its precision, creativity, and immersive experience.
Michelin inspectors highlighted Lilo’s “meticulous execution and soulful cooking,” applauding its balance of elegance and approachability. Signature dishes include dry-aged Japanese kinmedai and a 40-day-aged rib-eye, with inventive desserts like orgeat ice cream topped with caviar.
The restaurant is located in a converted boogie board factory on Roosevelt Street, designed to encourage interaction and connection around a chef’s counter.
Lilo’s recognition marks a major moment for North County’s dining scene, bringing the region into the national culinary spotlight. With this award, San Diego County now boasts five Michelin-starred restaurants.
Reservations are currently available, with the tasting menu priced at $265 per person.
